The hand is a vital part for the operation of a company. Processes are numerous between the arrival of the fish on the work tops and its departure by trucks transporting the “consecrated cans”. From one generation to the next, the hands of workers have performed similar gestures for over 150 years. Two machines will yet transform factory work: the crimper, to seal the cans and the autoclave, to sterilise them. Around twenty great stages mark the path of the sardine production, which are also used for tuna and mackerel.
